At the Youth Empowerment and Nurturing Initiative (YENI), we believe that practical skills are the foundation of self-reliance. Recently, we hosted a vibrant Pilau Cooking Masterclass in Kakuma, bringing together eager learners for a day of teamwork, culinary education, and community building.
Preparing Pilau—one of East Africa’s most beloved and culturally significant dishes—requires precision, patience, and the right blend of spices. For our participants, mastering this dish is a direct stepping stone toward employment in the local hospitality sector or launching their own catering micro-enterprises.
Hands-On Preparation & Teamwork
The training was highly interactive, ensuring every participant gained practical, real-world kitchen experience.

Fresh Ingredients & Flavor Profiles: The day began with a comprehensive introduction to the essential ingredients. Our prep tables were beautifully lined with fresh produce and staples, including raw meat, freshly peeled carrots, finely diced tomatoes, thinly sliced onions, and vibrant fruits like oranges and bananas. We also introduced the trainees to vital flavor enhancers, demonstrating the proper use of dark soy sauce, rich tomato paste, and the authentic Pilau Masala spice blend that gives the dish its signature aroma.

Collaborative Prep Work: True catering is a team effort. Participants gathered outdoors in a collaborative circle, working side-by-side on blue chairs. Together, they meticulously peeled carrots, portioned the meat on large metal trays, and prepped the vegetables. This hands-on process not only taught food preparation and hygiene but also fostered deep social inclusion and teamwork among the youth.
The Final Feast & Celebration
After hours of dedicated cooking, the results were nothing short of spectacular. The team proudly presented a magnificent culinary spread that showcased their hard work and new skills:

Perfectly spiced, aromatic Beef Pilau served alongside boiled potatoes.

Fresh, zesty Kachumbari (tomato and onion salad) to complement the rich rice.

A refreshing setup of freshly squeezed Orange Juice, complete with beautifully halved citrus fruits for presentation.
The day concluded with joyous team photos. Instructors, YENI team members, and the proud participants gathered behind their finished feast, their faces reflecting the confidence that comes from mastering a new, valuable skill.
